Magical Grapes with Chef Virgilio Martinez is back for the fourth consecutive season. We worked with Seiji and Chiho Morimoto of Magical Grapes Farm for this unique recipe, designed to showcase their picture-perfect Shinano Smiles. Native to Japan, this precious heirloom grape is prized for its fragrant juiciness and challenging cultivation. Here in California, Seiji and Chiho grow their garnet-colored, transparent Shinanos in individually wrapped bunches on custom trellises to maintain their shape and immaculate appearance. We collaborated with Chef Virgilio to highlight the grapes’ sweet, grassy flavor and honor Seiji and Chiho’s tireless dedication to this fickle fruit.

First, we push the Shinanos through a wine press, mixing in aromatic merlot grape juice for velvety richness. We then pound organic ginger and pink peppercorns in a mortar and pestle, cold-steeping the mixture in the luscious juice. The result is a lightly sparkly, snacky Delight that compliments our sun-grown flower without distracting from the integrity of the fruit.
