Rose Chocolate returns for a limited time!
A special occasion chocolate designed to be shared with friends and family. Chocolate Bananas is made with vanilla beans from Papantla in Veracruz, heirloom plantains, and 70% cacao infused with 20 MG THC and local flower rosin.
Huerik Palos, Enrique Olvera’s pastry chef at Pujol, sourced the ingredients for our house-made chocolate bars from small suppliers in Mexico, bringing them to the Rose kitchen during an annual visit to San Francisco. Bananas begins with thumb-sized heirloom plantains, which we left on our kitchen counter to get super dark and ripe before blending into a smooth puree. We scrape in every bit of fresh vanilla, then freeze dry the pods that remain, pulverizing them into a powder with the plantains. This sweet, fragrant mixture goes back into the freeze-drier, before being sifted into our chocolate refiner with our luscious cocoa butter and silky 70% chocolate.
The result is a special occasion chocolate with rich banana flavor designed to be shared, made in small batches with limited, seasonal availability.
